Another Ruffly Quilt



I showed you my first attempt at stippling and free motion quilting last week, and now get to show you the finished product! I needed to make a new sample for our Gathers & Giggles Quilt Pattern, and this is what I came up with. I don't know when I'll get over my purple infatuation (ex. here and here), but I don't think it'll be anytime soon.

For the front of the quilt I used both Kate Spain's Central Park and Anthology's High Society lines. The backing is a fabric from Central Park. Sometimes I feel guilty for mixing different designers, but they went together so well that I couldn't resist, and now I'm so happy with how it turned out!


After I finish a quilt it seems like I spend the next two weeks folding it and refolding it, and refolding it again, even if it just goes right back to sitting on my table. I'm not sure why it's so fun to fold new quilts, but it is! Please tell me I'm not the only one who feels that way. Or at least tell me you have a weirder obsession to make me feel better about myself, that would work, too :).

Stippling - A First!


I hate to say this, but I finally gave stippling a try for the first time! I've been wanting to learn for a long time, but as with so many things in my life, never got around to it. It was really fun to learn, and probably good that I started on a baby sized quilt rather than anything large. My skills (if you could call them that), are far from perfect, and I of course had to use my seam ripper in a couple of areas, but overall I'm really excited that I finally took the plunge.

Let me correct that. I was not excited when I finally had my quilt spray basted together and ready to quilt at 10pm the other night and realized I had ordered the wrong foot online. I ordered it months ago and never bothered to open the packaging. Luckily a little local shop had a generic darning foot that fit my machine that I was able to get to replace the even feed foot that I had purchased :). I guess eventually they'll both get a lot of use, right?!


I finished the binding on this little quilt tonight, will show more of it once I can get a pic in daylight!

A Healthier Lemon Cream Chicken Pasta


I love pasta. Pretty much any kind will do. One problem with that is the health factor, or lack there of. Between the noodles, the sauce, and the inevitable cheese, it's not always a very health conscious meal. The good news? It can be! I found this recipe for Lemon Cream Pasta With Chicken from my favorite recipe site, Allrecipes, the other day, and with a few simple changes, it became a healthy and delicous meal that my whole family enjoyed.

Lemon Cream Chicken Pasta

3 skinless, boneless chicken breast halves
1 lemon, quartered
2 teaspoons garlic powder, divided
1 teaspoon ground black pepper, divided
2 (14.5 ounce) cans reduced sodium chicken broth
1/4 cup fresh lemon juice
1 (8 ounce) package whole wheat pasta (rotelle or penne works best)
1 cup almond milk
1 red pepper
1 teaspoon grated lemon zest

1. Preheat oven to 350 degrees F (175 degrees C). Place chicken in a lightly greased baking dish. Squeeze lemon over both sides of the chicken breasts and season both sides using 1 1/2 teaspoons garlic powder and 3/4 teaspoon pepper. Bake for 40 minutes, or until juices run clear and chicken is no longer pink inside.
2. Meanwhile, in a large saucepan, season the chicken broth with the remaining 1/2 teaspoon garlic powder and 1/4 teaspoon pepper. Bring to a boil and add lemon juice and pasta. Cook over medium heat, stirring occasionally, until all liquid is absorbed, about 25 minutes.
3. Cut cooked chicken into bite-sized pieces and stir into cooked pasta, along with the almond milk, thinly sliced red pepper, and lemon zest. Cook, stirring, over low heat for 5 minutes. Remove from heat and let stand 5 minutes. Stir thoroughly before serving.

Although reduced sodium chicken broth still has a higher amount of sodium than I'd like, it's a good way to at least reduce some of the sodium content in the recipe. And have you ever tried almond milk?! If you haven't, do yourself a favor and try it! I've only recently been hooked on it. I've never been one to drink a glass of cow's milk, which I know is terrible, but other than on cereal or with chocolate added to it, I have to say I'm not a fan. When I was introduced to almond milk, my milk world changed for the better! My older sister and I joke that now we have a problem with drinking too much milk rather than not enough! It has a small amount of fat content, which is slightly more than skim milk, but is sooooo good. Think regular milk with a hint of almond flavoring. Mmmmm... Anyway, don't be scared of it, it's delicious! And from what we've tested so far, it's great in recipes and cream sauces as a substitute for cream.
 
I chose to add red peppers to the original recipe, but asparagus would also be great.

Wouldn't it be nice to have a room like any of these in your home?! I especially love the idea of wallpapering a closet, it's not an area you have to stare at all the time, so you'd be much less likely to get sick of it. Do you have any fun plans for St. Patrick's Day? My kids wore their St. Patrick's Day shirts to the gym this morning, and other than making some cookies, I think that'll be it for us. I normally don't buy "holiday" shirts, but I bought them each one last year on clearance for a couple dollars not realizing they were St. Patrick's Day shirts, so they've been wearing them all year! I figured if I didn't notice at first, hopefully no one else would either :). Hope you have a fun day!

Crocheted Headband


One thing that I really envy about knitters and crocheters is that they can sit in front of the TV while getting something done. Once in awhile I like to feel somewhat productive while I watch TV, so the other night I crocheted another headband.

I used this pattern again for the headband, and just winged the flower (I loosely based it off of this tutorial that I've used before).

Thanks to Wyatt for taking the pictures for me! Give a 3 year old a camera and a tripod and you might be surprised :).

A Hoodie For Wyatt


Now that we've finally had a couple of days of relatively nice weather here in Utah, I realized that Wyatt has outgrown almost all of his hoodies and spring jackets. I bought the Urban Hoodie Pattern from Heidi and Finn awhile back, and thought that it was the perfect time to finally use it!


I've been trying to use up fabric from my stash (stashes, to be correct), and had a few yards of grey sweatshirt fleece that I picked up years ago from Walmart for a dollar a yard, so I wanted to use it for Wyatt's hoodie. I used a bit of it to make Wyatt some sweats last year, but other than that it's just been taking up a lot of space that it shouldn't.

I was planning on using brown jersey knit for the lining, but when I saw the turqoise at JoAnn and knew that it would match my kids' hats, I couldn't resist!


Once I had everything cut out, the hoodie only took a couple hours to make. I used my serger for everything except the topstitching, where I used a turquoise thread for contrast.


I'm still not too sure about the big turqoise button. I think I may swap it out for a less juvenile (can I say that when I'm talking about my three year old?) button, but it's there till I make up my mind :). Too cartoon-y or something?


Either way, Wyatt loves it and was excited to wear it. And let's face it, if he's happy, I'm happy :).

Spicy Honey Chicken Recipe - Two Meals In One!

...In case you missed this when I shared it over at SIDAC for Jenny's Meals Kids Love series, here it is!


I don't know about you, but I love eating salads as a meal. My little boys, on the other hand, aren't so crazy about them. I've been on the search for a salad that would please my husband, myself, and our 3 and 1 year olds, and finally found it! My sister recently directed me to this recipe that she found at Our Best Bites and my family is hooked -- hopefully your's will be too!

My favorite part about this recipe is that it's two meals in one. The first night I make the chicken and serve it with potatoes or brown rice and vegetables, and the second night it's thrown into a delicious salad that'll be loved by both young and old (not that I'm old or anything... of course not)! The honey adds just enough sweetness to make your kids want to eat all the healthy ingredients without putting up a fight. The recipe calls for 8 chicken breasts, so for an average family of 4 it should be perfect for two meals.


Spicy Honey Chicken (recipe from Our Best Bites)
8 boneless skinless chicken breasts (Our Best Bites swears that thighs are better for this recipe but I like to stick with breasts), about 2lbs
2 t vegetable oil

Rub:
2 t granulated garlic
2 t chili powder
1/2 t onion powder
1/2 t coriander
1 t kosher salt
1 t cumin
1/2 t chipotle chili powder

Glaze:
1/2 C Honey
1T Cider Vinega

Combine the rub spices in bowl and mix well.

Use kitchen shears (or a pair of clean scissors) to trim off any excess fat from the chicken pieces. Pat dry. Drizzle oil over chicken and rub in with your hands to lightly coat all the pieces. Then toss chicken with the spice rub to coat all sides well. Use your hands and get in there! Grill chicken for 3-5 minutes on each side, until cooked through.

While chicken is cooking, warm honey in the microwave so it's not so thick. Add the vinegar and combine well. Reserve 2T honey glaze for later. Take the rest and brush on chicken (both sides) in the final moments of grilling. Drizzle reserved glaze on top.

Salad option:
1-2 heads Romaine or Red Leaf Lettuce
2 ripe but firm mangoes, chilled
2-3 ripe but firm avocados
optional: thinly sliced red onions (you may want to leave the onions out of your kids' salads)

While chicken is grilling, wash lettuce and divide among serving plates. Slice avocados, onions, and mangoes and place them on top of the lettuce. When chicken is finished, let it sit for 5 minutes before slicing to preserve the juices. Then slice it up and divide among the salads.

Drench it all in the Honey-Citrus Vinaigrette:
1 garlic clove, minced
1/2 T grated onion
1/3 C fresh orange juice
3T fresh lime juice
2T honey
3/4 t cumin
1/2 t salt
1/4 t ground black pepper
1/2 C vegetable oil

Place all ingredients in a tightly sealed jar and shake vigorously.

Enjoy watching your kids happily eating a salad!

More Handmade Gifts!


Wow, my household has sure been lucky lately. Earlier I showed you the apron that my SIL made me, and now I get to show you the adorable toques that my sister Ada knitted for my boys.


She made them hats last year too, and I think she should make it a yearly tradition! Seriously though, she's one of the most generous people I know, a person that's willing to do anything for anyone at anytime. I always tell her that I wish we lived closer so I could take more advantage of her generosity!


Thank goodness for rare days where it's warm enough here in Utah to bundle up and head to the park or zoo. I normally would never attempt going to the zoo alone with my two boys, but after being cooped up all winter, a couple weeks ago I was ready to get out and take my chances! We ended up having a great time, with no major incidences, and I'm sure Wyatt and Weston enjoyed the fresh air even more than I did.
